WTF is Gluten?

Japanese people simply cannot wrap their heads around the idea that some people in America do not eat meat. That some don’t even eat FISH is even more baffling to them since they essentially equate fish to vegetables. So, imagine their complete shock when I try to explain what a vegan is. Saying that some people do not consume ANYTHING that comes from an animal astounds them. And I will never forget the way my teacher friend’s face went completely expressionless and blank with a lack of comprehension when I tried to explain gluten. Gluten free will never be something that will make sense here, so I don’t even try to tell people about that anymore.



Yes, the Japanese diet is pretty great sometimes. Sushi, sashimi, delicious fish and miso soups among other things… but sometimes, I must admit, it is a bit of a challenge. For example, Japanese people eat the skin of everything. If a fish is small enough, they will eat the ENTIRE thing, head and all. And perhaps this is normal, but they eat chicken skin as well. Not my thing.



Searching for whole wheat bread and brown rice is one that is generally in vain. I found brown rice once, and it was like searching for a needle in a haystack. They are a little behind jumping on the health food bandwagon. One of the things they do right here is drinking soup from bowls. I hate that in America we have to use our stupid spoons for broth.

Boulder and D.C. Couldn't Be More Different

Differences between the D.C. area and Boulder, CO:

1) "Recycling" is not a familiar term to inhabitants of the nation's capital. Whereas those who do not compost are generally subject to scrutiny form the environmentalists comprising Boulder's population, I'd bet that the majority of D.C. residents do not even know what composting is, nor have the option to do so.
Yeah... you're not getting these options in D.C. 

2) There is this crazy thing called "diversity" in D.C. as opposed to in Boulder where everyone is a slightly different shade of white. Pale white, slight olive-hued but still white skin, white with freckles...Here, I am often the only Caucasian on the bus or in a restaurant or in the gym and I love it. Variety is the spice of life, after all.

This is diversity in Boulder... I guess the guy in the front is slightly tan?

3) Sidewalks randomly end. It is seriously perturbing, especially for runners like me. There seems to be no rhyme or reason as to why they end, but right when you least expect it, the sidewalk just disappears, perhaps into some other dimension comprised entirely of the last portions of D.C. and Northern Virginia sidewalks.

That looks about right... 

4) Gluten free? Dairy free? Huh?? I've sporadically seen some gluten free items along the shelves of markets here, but asking for dairy free in a restaurant receives an eyebrow raise from the waiter and a completely baffled look. Chances are, if they say it is a dairy-free dish, you're probably going to get some anyway.



5) Pedestrians beware! In Boulder, anyone traveling on foot can basically step in front of an 18-wheeler without even glancing both ways and the truck will come to a screeching halt. Here, a pedestrian can be mid-intersection DURING a WALK SIGNAL and still provoke honk after honk from angry cars trying to turn right and having to wait a whole ten seconds for someone to cross the street. You could easily get struck by a car and it would not be a big surprise to anyone.

Hogwarts Peanut Butter Cookies

First, a legal disclaimer: I did not ask J.K. Rowling if I could use the name of her famous school of witchcraft and wizardry. Shockingly, I think she has more pertinent issues to concern herself with than a rarely-visited blog using the name of her imaginary school. Just a wild guess. The reason I titled this recipe as such is because I cannot come up with anything other than witchcraft and wizardry to explain how these peanut butter cookies do not fall apart, considering there is no flour in them. I contest that some Hogwarts professor or kitchen employee created this recipe that I just happened to come across. Please enjoy this easy recipe for gluten and dairy-free peanut butter cookies!

Hogwarts Peanut Butter Cookies

Ingredients:
-2 cups peanut butter
-1 cup packed brown sugar (can anyone think of a single recipe that calls for brown sugar that isn't packed?)
-1 cup white sugar
-2 eggs
-2 tsp. baking soda

Instructions:
1) Preheat oven to 350 degrees F (if it were celcius I would be concerned)
2) Mix everything together and beat until well-combined
3) Drop little spoons of dough onto cookie sheet and create a crisscross pattern with a fork
4) Bake for about 8-10 minutes
5) Enjoy!
